Valentine’s Day Berry Tart

Shortbread Crust

- ½ cup butter, melted

- ¼ cup white sugar

- 1 tsp vanilla extract

- ½ tsp salt

- 1 cup all-purpose flour


Steps:

1. Preheat oven to 350°F.In a medium bowl, whisk together butter, sugar, vanilla and salt.

2. Add the flour and mix until combined.

3. Press the dough into a 9-inch tart pan, pierce the bottom with a fork and bake for 15 minutes.


Lime and Berry Filling

- 1 tray Koyo Berries, sliced

- ½ cup sugar

- 1 tbsp cornstarch

- 1 (14 oz) can sweetened condensed milk

- Juice of 3 limes

- 1 tsp lime zest

- 1 large egg yolk

To decorate: 2 trays Koyo Berries, thinly sliced


Steps:

1. Heat the berries, sugar and cornstarch in a saucepan over medium heat. Whisk to combine until the mixture thickens to a jam-like consistency.

2. In a medium bowl, whisk together the sweetened condensed milk, lime juice, lime zest and egg yolk.

3. Pour the milk mixture into the baked tart shell and top with dollops of the berry jam. Swirl with a knife.

4. Bake for 15–20 minutes until the filling is just set and the crust is golden brown.

5. Let the tart cool to room temperature, then refrigerate for 2 hours.

6. Once chilled, decorate with the sliced berries.
