Summer is about to get spicy with this Thai-inspired mocktail made with Synergy's Strawberry Serenity Raw Kombucha and perfectly ripe Koyo Berries. The Koyo Berry simple syrup has quite the kick, and fresh ginger and lime juice work beautifully with Synergy Kombucha!
Ingredients:
½ cup sugar
1 tray Koyo Berries
¾ cup water
4 Thai bird's-eye chillies
One knob ginger
Lime juice
Lime peel
¼ cup chopped lemongrass
2 trays Koyo Berries
Synergy Strawberry Serenity Raw Kombucha

Method:
1. The night before, add 1 tray of mini Koyo Berries to an ice cube tray.
2. The next day, combine sugar, water, 2 chillies, ginger, one tray chopped Koyo
3. Berries and lime peel in a small saucepan. This is our Koyo simple syrup.
4. Bring to a boil then set aside to infuse. Strain.
5. For one cocktail, drop the Koyo ice cubes in a tall glass, then fill with 1 ounce of the simple syrup, ½ ounce lime juice, and top with 6 ounces Synergy Strawberry Serenity Kombucha. Lightly stir.
6. Top each cocktail with a generous sprig of mint, half a chili, and more Koyo Berries if desired.
