This Sumo Citrus® and Oishii Berry Jam slowly simmers fresh Sumo Citrus and Oishii Berries to create a thick, glossy and flavorful small-batch jam. A touch of vanilla and cinnamon rounds out the bright citrus and sweet berries with subtle warmth. This jam keeps in the fridge for up to two weeks, perfect for toast, yogurt or spooning straight from the jar.

Ingredients:
3 Sumo Citrus (zest of one)
2 trays Oishii Koyo Berries
¾ cup sugar
½ tsp salt
½ tsp vanilla extract
¼ tsp cinnamon
Steps:
1) Begin by zesting one Sumo Citrus. Set the zest aside, then peel and segment the 3 Sumo
Citrus and chop into small pieces.
2) De-stem and chop the berries into small pieces.
3) In a medium saucepan, combine the Sumo Citrus, berries, sugar and the zest of one Sumo
Citrus.
4) Heat over medium heat until the fruit softens and comes to a boil. Once the fruit begins to
soften, use a masher to break down into a smooth mixture.
5) Stir in the salt, vanilla and cinnamon.
6) Continue to cook the mixture for 45 minutes to 1 hour, stirring occasionally to prevent
sticking.
7) The fruit will break down and the mixture will thicken into a jam-like consistency.
8) Remove from the heat and let cool before transferring into a clean jar.
9) Refrigerate the jam and use within 1-2 weeks.
