Rubī Tomato Caviar

Rubī Tomato Caviar is a savory and impressive garnish made by blending Rubī tomatoes with smoked salt and soy sauce. The mixture is set into spheres with agar agar, resulting in umami-rich tomato pearls that are a fun addition to any dish. 

Rubī Tomato Caviar is a savory and impressive garnish made by blending Rubī tomatoes with smoked salt and soy sauce. The mixture is set into spheres with agar agar, resulting in umami-rich tomato pearls that are a fun addition to any dish. 


Ingredients: 

1 tray of Rubī Tomatoes

3 TBS smoked Maldon salt 

1 TBS soy sauce 

1 tsp agar agar 

2 cups vegetable oil 


Steps: 

1) Add vegetable oil to a tall glass and place in the freezer. The oil must be chilled for 1-2 hours in order for the caviar to set properly. 

2) De-stem tomatoes and add to a blender with salt and soy sauce.

3) Blend until smooth and then strain through a mesh strainer. 

4) Strain the mixture once more through a cheesecloth. 

5) Add the tomato liquid to a pan with 1 teaspoon of agar agar. 

6) Whisk over medium heat until the mixture comes to a simmer. Then take off heat and cool for 5 minutes. 

7) Using a dropper, slowly drop liquid into the glass of oil. 

8) Strain over a glass bowl and rinse your caviar with cold water. 


*Serving suggestion: Top potato chips with creme fraiche, a dollop of Rubī caviar, more smoked salt and finely chopped chives.
