Roasted Omakase Berry Cinnamon Rolls

Ingredients
Brioche Dough
- ½ cup whole milk
- 1 TBS sugar
- 2 ¼ tsp active dry yeast
- 2 eggs, room temp
- 1 tsp vanilla extract
- 2 ½ cups all purpose flour
- ½ tsp salt
- 6 TBS unsalted butter, room temperature
Roasted Omakase Berry Filling
- 3 trays Omakase Berries, use 2 trays for roasting and reserve 1 tray for fresh filling and garnish
- ¼ cup sugar
- 1 tsp vanilla extract
- ½ tsp salt
- 2 tsp cinnamon
- 8 TBS unsalted butter, browned
Cream Cheese Icing
- 8 ounces cream cheese
- 4 TBS unsalted butter, browned
- 3 cups powdered sugar
- 1-2 TBS heavy cream
- 1 teaspoon vanilla extract
Steps:
- Warm the milk to about 110 degrees fahrenheit.
- Sprinkle the sugar and yeast on top of the milk and mix to combine. Let sit for 10 minutes until frothy and activated.
- Add the eggs and vanilla and mix until well combined.
- Add half the flour to the mixture and mix with a dough hook until combined.
- Add the rest of the flour to the bowl and knead with a dough hook until the dough starts wrapping around the hook.
- While the dough is mixing, add in the room temperature butter one tablespoon at a time. Mix well after each addition.
- Knead for 10 minutes or until the dough passes the windowpane test and is no longer sticky. You should be able to stretch the dough into a thin sheet without it breaking.
- Pat the dough into a ball and add to a greased bowl. Cover with a towel and let rise for an hour.
- While the dough is rising, preheat the oven to 350 degrees fahrenheit and line a sheet pan with parchment paper.
- Add the berries to the pan and toss with sugar, vanilla extract, salt and cinnamon.
- Roast for 30 minutes, checking every 10 minutes and stirring the berries.
- Add the butter to a saucepan and brown over medium heat. Set aside to cool.
- When the dough rises, roll out into a rectangle about ¼ inch thick and cover with a layer of browned butter, roasted berries, fresh berries, and sprinkle of cinnamon.
- Roll one wide end to the other and pinch the seam to seal.
- Cut into 8-9 even slices and arrange in a buttered pan. Cover and let rise again for 30 minutes or until doubled in size.
- Bake at 350 degrees fahrenheit for 25-30 minutes until golden brown.
- While the cinnamon rolls bake, prepare your glaze by combining cream cheese, browned butter, powdered sugar, and heavy cream and mixing until well incorporated.
- Top the warm rolls with the glaze and garnish with more Omakase Berries and enjoy!
