Oishii Berry Hot Dog Condiments

Roasted Berry Ketchup 

Ingredients: 

1 tray Koyo Berries

2 garlic cloves 

3 TBS olive oil 

¼ cup shallot, finely chopped

⅓ cup brown sugar 

¼ cup jalapeno, sliced 

2 TBS tomato paste 

3 TBS apple cider vinegar 

2 teaspoons salt 


Steps: 

1) Pre-heat oven to 400 degrees F.

2) Add chopped berries and garlic to a parchment lined tray and roast for 20 minutes. 

3) Add oil and shallot to a saucepan and cook on medium heat until shallot is translucent and softened.

4) Add brown sugar, jalapeno, tomato paste, apple cider vinegar, and salt to the saucepan and cook on medium heat until simmering and well combined. 

5) Blend until smooth and cool before serving. 


Berry and Pickle Relish 

Ingredients: 

½ cup Koyo Berries, chopped

½ cup dill pickles, chopped 

¼ cup red onion, finely chopped

2 TBS apple cider vinegar 

¼ teaspoon red chilli flakes 

1 teaspoon salt 

1 teaspoon sugar 


Steps: 

1) Finely chop berries, pickles, and red onions and add to a bowl. 

2) Add the apple cider vinegar, red chilli flakes, salt, and sugar to the bowl and mix well. 


Berry Mustard 

Ingredients:

2 Koyo Berries 

2 TBS dijon mustard

2 TBS honey mustard

2 TBS yellow mustard 


Steps:

1) Chop berries into small pieces and add to a bowl with mustard, mix well to combine.
