Nikko Berry Toaster Strudel

These Nikko Berry Toaster Strudels are the perfect last-minute treat for mom 🍓❤️  Buttery store-bought pastry, ripe Nikko Berry jam, and a heart-shaped center that comes together in under an hour.

 

Ingredients:

-1 box store-bought pastry dough sheet 

-1 10 oz tray of Nikko Berries

-½ cup white sugar 

-1 egg 

-½ cup powdered sugar

-1 TBS heavy cream 


Steps:

1. Defrost pastry dough according to package instructions. 

2. Destem strawberries and chop into small pieces. Add to a saucepan with white sugar. Heat over medium heat until the mixture begins to bubble and thicken, about 20 minutes. Stir occasionally so the saucepan doesn’t boil over. Remove the jelly from heat and allow to cool to room temperature. 

3. Preheat oven to 400 degrees and line a baking sheet with parchment paper. 

4. Using a heart-shaped cookie cutter, cut out hearts from the pastry dough. Optional: Use a smaller cookie cutter to cut out a heart-shaped opening from half of your pieces. This will create a “window” for the jelly to peek through.

5. Fill each pastry with about a tablespoon of berry jelly. 

6. Crack an egg and whisk until smooth. Using a pastry brush, brush the edges of the dough with egg wash. 

7. Top with another pastry heart and press down to lightly seal the edges with your finger. Use a fork to crimp the edges all around the heart shape. Brush the tops completely with the egg wash. Bake for about 25-30 minutes, until golden brown. 

8. While the toaster strudel is baking, prepare your frosting by combining powdered sugar and heavy cream together in a small bowl. 

9. When the toaster strudel is ready, let cool for 10-15 minutes before drizzling with the frosting. Serve alongside fresh berries and enjoy!
