Koyo Berry Matcha Breakfast Tiramisu

@stephh_lau's Koyo Berry Matcha Breakfast Tiramisu is a delicious way to start the day, complete with refreshingly sweet, subtly tart Koyo Berries.

This recipe from @stephh_lau is a crave-able way towards healthy eating.

"I’ve been craving tiramisu but wanted to keep it a bit lighter and brighter. This tiramisu subs mascarpone for a tangier, protein-rich Greek yogurt and layers in the summery sweet freshness (even in the depths of winter) of Oishii's Koyo Berry!" 

YOGURT FILLING — Over a double boiler, whisk 1 egg yolk and 1 tbsp sugar until pale. Once cool, fold in 1 cup Greek yogurt and 1 tbsp maple syrup until uniform.

COOKIE LAYER — In a shallow bowl, whisk together 1/2 cup water and 1 tbsp ceremonial grade matcha. Quickly submerge ladyfingers in matcha and place in a single layer in a 4x4 Tupperware container.

ASSEMBLY — Layer 8 matcha-soaked ladyfingers, sliced Koyo Berries, and yogurt filling, and repeat until the container is full. Set in the refrigerator for 4 hours or overnight.

TO SERVE — Dust with 1 tbsp matcha powder and top with extra Koyo Berries.
