Ingredients
Caramel Base
7oz. sweetened condensed milk
2 sticks butter
1 cup dark brown sugar
1/2 cup light corn syrup
2 teaspoons vanilla extract
1 teaspoon flaky sea salt
Marshmallow Layer
1 ½ packets unflavored gelatin
1/2 cup cold water (divided, ¼ cup for gelatin and ¼ cup for sugar syrup)
3/4 cup granulated sugar
1/2 light corn syrup
1 TBS vanilla extract
Pinch of salt
Koyo Berry Swirl
2 trays Koyo Berries
2 TBS sugar
1 TBS lemon juice
Chocolate Coating
12oz. chocolate chips
Steps:
Caramel Layer
- Prepare the caramel layer by lining an 8x8 dish with parchment paper.
- Melt the butter in saucepan and add the brown sugar and corn syrup, stirring to combine.
- Add the sweetened condensed milk and heat until 240ºF on a candy thermometer.
- Take off the heat and add the salt and vanilla.
- Pour into a lined pan and let cool until set for an hour in the fridge.
Koyo Berry Swirl
- Make the Koyo Berry Swirl by combining Koyo Berries, sugar, and lemon juice in a saucepan over medium heat. Set aside to cool.
Marshmallow Layer
- In a stand mixer bowl, add 1/4 cup of cold water and sprinkle over the gelatin.
- Add the rest of the water, sugar, corn syrup, and salt to a medium saucepan and bring the mixture to 240°F.
- Add the mixing bowl to a stand mixer and whisk on low with whisk attachment. While the mixer is running, very slowly and carefully pour the hot sugar mixture into the bowl.
- Once the sugar is incorporated, add the vanilla. Turn the mixer to high and whisk until the mixture is thick, stiff, and glossy.
- Add to the top of the caramel layer and spread evenly.
- Dollop the Koyo Berry swirl over the marshmallow and use a knife to swirl evenly on the top.
- Let the marshmallow sit for at least 4 hours.
Chocolate Coating
- Add an inch of water to a saucepan and cover with a glass bowl. Add the chocolate chips and melt over medium heat until smooth and glossy.
- Cut the marshmallows into small pieces and carefully dip and cover in the melted chocolate. Enjoy!
