Ginger Mint Summer Salad

Fresh, fruit-forward, and a little fancy 🍓✨ This Ginger Mint Summer Salad can be made with any fruit, such as dragonfruit, melon, or sumo orange, but Nikko Berries are a must.

Fresh, fruit-forward, and a little fancy 🍓✨ This Ginger Mint Summer Salad can be made with any fruit, such as dragonfruit, melon, or sumo orange, but Nikko Berries are a must.


Ingredients:

-10 ounce tray of Nikko Berries

-Fruit of choice (such as dragonfruit, oranges, or grapes)

-1 bunch fresh mint

-1 cup white sugar

-1 cup water 

-2 knobs fresh ginger 

-1 lemon 


Steps: 

  1. Peel the ginger and chop into small pieces. 

  2. Add to a saucepan with mint, sugar, and water. 

  3. Bring the mixture to a boil to dissolve the sugar. 

  4. Remove the syrup from heat, add the lemon juice, and let cool to room temperature. 

  5. In a large mixing bowl, chop fruit into bite-sized pieces.

  6. Add ginger mint syrup to taste.

  7. Stir to combine and serve.
